Fried Rice
3 cups cooked rice, cooled
2 tsp oil
3 eggs
1/2 cup grated carrots
1/4 cup chopped celery
1/2 cup sliced mushrooms
1/4 cup sliced green onions
1/2 cup frozen peas
1/2 cup cooked meat - shrimp, ham, chicken - chopped
3 Tbsp soy sauce
Recipe
IN large skillet, heat 1 tsp oil over medium heat. Beat eggs with fork. Cook
and stir until scrambled. Remove from pan and cut into thin strips.
Set aside. In same pan, heat remaining 1 tsp oil and saute carrots, celery, and
mushrooms for 5 minutes or until mushrooms are soft. Stir in green onions and
cook for 1 minute. Add peas, meat, and rice. Sprinkle with soy sauce and toss
gently.
Stir in scrambled eggs. Cover and cook 3-4 minutes or until
heated through.
Makes 6 servings.
