    This is a Russian beet/potato salad with a Salvadoran twist
    I don't use measurements so these are rough estimates
    you can also add boiled eggs to this recipe

    List of Ingredients




    Ya Ya'a Russian beet and potato Salad



    Light Whipping Cream, 2 cup, whipped
    Sour Cream, reduced fat, 1 cup
    Kraft Mayo Light Mayonnaise (Mayo), 8 tbsp
    Lime Juice, 1 lime yields
    Beets, fresh, 4 cup
    Boiled potatoes, 8 potato (2-1/2" dia, sphere)
    Mixed Vegetables, frozen, 1.50 package (10 oz)
    Cilantro, raw, 16 tbsp
    Vegetable, Fresh, Onion, White, 1 cup

    Recipe




    Boil the potatoes until tender

    Cook mixed vegetables according to package

    Drain and dice the beets

    Finely chop onions and cilantro

    Add all of the ingredients into a large bowl until everything is well coated season to taste and chill before serving

    Number of Servings: 10
