Apple-Glazed Salmon
2 teaspoon finely snipped fresh thyme
1 teaspoon finely snipped fresh rosemary
2 teaspoon dried juniper berries, crushed
1/4 cup dry vermouth
1/3 cup apple jelly
1 1/2 pound salmon fillet (cut 1-inch thick), cut into 4 equal portions, or four 6-ounce pieces of salmon fillet
1/4 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
4 - 8 sprigs fresh thyme and rosemary sprigs (optional)
Recipe
1. Set aside 1/4 teaspoon each of the thyme and rosemary to use as garnish.
2. For glaze, place juniper berries in a small saucepan over medium-high heat, and toast about 1 minute or until fragrant. Add vermouth and the remaining thyme and rosemary; bring to boiling. Stir in apple jelly; simmer just until melted, about 1 minute. Remove from heat and set aside.
3. Preheat oven to 400 degrees F. Heat a large nonstick skillet over high heat. Cook salmon, skin side up, about 2 minutes or until lightly browned. If using a skillet that is not ovenproof, transfer salmon to a 2-quart rectangular baking dish. Season each fillet lightly with salt and pepper. If using an ovenproof skillet, turn pieces with a large spatula, and season each salmon lightly with salt and pepper. Spoon the reserved glaze over each fillet.
4. Bake 8 to 10 minutes or until the salmon is just cooked through and the glaze is lightly browned and caramelized. Remove from the oven, sprinkle the reserved herbs over the fillets, and serve immediately. Garnish with fresh thyme and rosemary sprigs, if desired.
Makes 4 servings.
