    Baked Salmon

    Salmon filets [not steaks] cut into serving portions
    Grated Lemon Peel [you can use dried lemon peel, but
    fresh peel is better]
    1/3 cup lemon juice [the juice of one lemon - more is okay]
    2/3 cup water [or enough to make one cup

    Preheat oven to 400 degrees. Place filets, skin side down, in cooking
    spray coated glass dish large enough to hold all the filets [for 6
    filets use a 9 x 13 pan; for 4 I use a 9 x 9 pan]. Grate fresh
    lemon zest and sprinkle liberally over filets. Bake for 15 minutes or
    until salmon flakes easily with fork. Remove from oven. Add water to
    lemon juice. Pour liquid over filets and let stand for 5 minutes.
    Remove the skin from the filets and serve.
