Crab Cakes from Deborah
1lb jumbo lump crab meat
¾ c aioli (homemade mayonnaise)
1 ½ c herb bread crumbs
1T finely chopped Italian parsley
3t finely chopped fresh thyme
¼ c minced shallot
2T finely chopped basil
2T Dijon mustard
Zest of 1 lemon
Salt and pepper to taste

Combine first 10 ingredients in a large mixing bowl.
Gently mix ingredients together, careful not to break up the crab meat. (You will want to see big chunks of crab meat throughout the cakes.)
Once incorporated, patty the cakes out about 2-3 ounces in size.
When all cakes are made, toss them in the reserved bread crumbs and sauté them on both sides until golden brown. Serve hot.
