Lemon Grass Baked Salmon
1/2 lb salmon filet
2 Tbs dry white wine
1 oz melted butter
1 tsp olive oil
pinch of salt, pepper to taste
1/2 cup fish stock
1/2 oz lemon grass
1/2 tsp freshly grated ginger,
1/2 cup whole flat Chinese green beans
1 oz butter
parsley garnish
Recipe
Combine wine, butter, oil, salt and pepper. Pour over fish. Bake five minutes in 250 degree pre-heated oven. Set aside. In skillet, boil fish stock, lemon grass, ginger, green beans - until beans are cooked al-dente, not mushy. Remove beans to heated plate. Place salmon filet on top of beans. Add ounce of butter to remaining liquid and swirl to thicken. Pour over fish. Garnish with parsley and serve immediately.
