    Sherry Soy Glazed Pan Seared Scallops over Thai Chili Fried Rice


    6 U-10 Scallops (jumbo)
    1/8 cup olive oil
    1/8 cup melted butter

    Sherry Soy:

    1 cup of water *
    1/8 cup of Kikoman Soy Sauce
    1/4 cup of Cream Sherry
    1/2 cup of sugar

    Fried Rice:

    2 cups of Steamed Jasmine Rice
    1/8 cup of sesame oil
    1 chopped shallot
    1 tblspn minced garlic
    1/8 cup chopped carrots
    3 sprigs of cilantro (chopped)
    1/8 cup of edamame beans (hulled)
    3 tblspns soy sauce
    1 tblspn Thai Chili Paste
    1 pinch white pepper
    1 pinch of sugar
    1 lime wedge (squeezed)

    Recipe




    Heat oil and butter in a hot pan. Sear scallops until golden brown on each side.

    Sherry Soy:

    Mix ingredients thoroughly. *Best to use very hot water to melt sugar.

    Fried Rice:

    Add sesame oil to hot pan. Add garlic, shallots, carrots, and edamame. Sautee until brown then add rice. Add soy sauce, chili paste, white pepper, and sugar. Stir until brown. Mix in lime juice and cilantro.

    Put on plate and enjoy!!
