    Diabetic Whipped Chocolate Cream


    1 oz unsweetened chocolate
    3/4 c skim milk
    1 env unflavored gelatin
    1/2 c water
    2 egg yolks
    1/2 c whipping cream
    2 t vanilla
    2 egg whites
    3 pkt sugar substitute

    Recipe





    Melt chocolate with milk in top of double boiler over simmering
    water, stirring occasionally. Sprinkle gelatin over water and
    let stand 1 minute. Add to chocolate mixture and stir until
    completely dissolved. Beat egg yolks until lemon colored. Stir
    part of hot mixture into egg yolks, then add back into hot
    mixture. Cook over low heat until mixture starts to thicken.

    Remove from heat and add vanilla. Chill until mixture begins to
    thicken. Whip cream and add to chocolate mixture. Beat egg
    whites until peaks begin to form, add sugar substitute, beat
    until stiff. Gently fold into chocolate. Spoon into dessert
    cups and chill until set. Makes 6 servings.
