    Weight Watchers Bread Pudding


    8 slices reduced-calorie whole wheat bread, cut into 1" cubes
    1/2 cup raisins or currants (I usually put more in cos I love them..grin)
    4 cups nonfat milk
    1 1/3 cups fat-free egg substitute
    3 tbsp sugar
    1 tsp vanilla extract
    1/2 tsp cinnamon (again, I usually put more in cos I like it spicy!)

    Recipe





    1. Preheat oven to 350 degrees F. Spray 2 qt. casserole with nonstick
    cooking spray.

    2. Place the bread in the casserole, sprinkle with raisins.

    3. In a medium bowl, combine milk, egg substitute, sugar, vanilla and
    cinnamon, pour evenly over the bread mixture.

    4. Bake until a knife inserted in the center comes clean, about 55 minutes.
    Cool in pan on rack 10 minutes--serve warm.
    (we like it warm, but we love it after it's cold from the fridge!)
