    Weight Watchers Herbed Chicken Breasts


    2 tablespoons margarine
    2 tablespoons shortening
    4 chicken breasts
    1/2 cup finely chopped onions
    4 ounces mushrooms, sliced
    1/4 cup margarine
    3/4 cup dry white wine
    3 tablespoons cornstarch
    1/4 cup water
    2 cups fat free plain yogurt
    1 teaspoon salt
    1/2 teaspoon dried tarragon leaves

    Recipe




    Heat oven to 350 degrees. Heat 2 tablespoons margarine and the shortening in a rectangular baking dish, 13x9x2 inches, in oven until melted. (or in microwave). Place chicken in dish; turn to coat with margarine mixture. Arrange chicken, skin sides up, in dish. Bake uncovered one hour.

    Cook onion, garlic and mushrooms in 1/4 cup margarine in 10 inch skillet until onion is tender; stir in wine. Stir in cornstarch into water until smooth; stir into wine mixture. Bring to boil stirring constantly. Boil and stir one minute; remove from heat. Stir in yogurt, salt and tarragon leaves; pour over chicken. Cover tightly with foil. Bake 10-15 minutes longer or until chicken is done. Remove chicken to warm platter. Stir sauce and spoon over chicken. Sprinkle with additional tarragon leaves if desired.
