    Fresh Fruit Salad with Lady Fingers and Chantilly Cream



    from Grand America's La Bonne Vie

    This recipe uses berries. Any fresh fruit may be used.
    Fruit Salad
    1 pt Strawberries
    1 pt Blueberries
    1 pt Raspberries
    1 pt Blackberries
    1/4 c Honey
    1/8 c Water

    In a small saucepan, warm Honey and Water.

    Combine Berries in a bowl and toss with Honey Syrup
    Drain and plate.


    Chantilly Cream
    2 c Heavy Cream
    3/4 c Sugar
    1 t Vanilla Extract


    Lady Fingers:
    3 Eggs, Separated
    6 Tbsp. Granulated Sugar
    3/4 C Cake Flour
    6 Tbsp. Powdered Sugar

    Recipe



    Preheat oven to 350F and grease 2 cookie sheets and line with parchment

    Combine Egg Whites with Granulated Sugar and whip in a mixer until firm peaks form. Meringue should be shiny and smooth.
    With a rubber spatula, spoon the meringue into a large mixing bowl.

    Combine Egg Yolks with Powdered Sugar and whip in a mixer until the mixture is ribbony. It should be thick enough to sit on itself.

    Spoon the Yolks into the large bowl with the Whites.
    Sift the flour into the bowl and gently fold everything to combine.

    using a piping bag and a large plain piping tip, pipe strips of batter on to the cookie sheet about 5" long and 3/4" thick. Leave about 1.5" between each strip.

    Bake for 10 minutes then rotate the pan.
    Bake until golden brown. About 5 more minutes.
    With a small metal spatula, remove the lady fingers and allow to cool on a cooling rack.
