    Italian Meatloaf


    1 pkg. (6 oz.) Stove Top® Stuffing Mix for Chicken
    1 jar (24 oz.) spaghetti sauce, divided
    2 tsp. dried oregano leaves, divided
    1-1/2 lb. extra-lean ground beef
    2 cups each chopped zucchini, sliced fresh mushrooms
    3/4 cup mozzarella cheese

    Recipe




    Heat oven to 375° F (185º C).
    Mix stuffing mix with half of spaghetti sauce and oregano.

    Add meat; mix well.

    Pat into 13x9" baking dish.

    Mix vegetables and remaining spaghetti sauce and oregano.

    Spoon over meat mixture; cover.

    Bake 25 minutes.

    Top with cheese.

    Bake, uncovered, 10 minutes longer or until meatloaf is done, and reaches 160° F (85º C) internal temperature.

    Serve with favorite cooked vegetables, such as steamed green beans and boiled potatoes.

    Makes 6 servings.

    Note: Add spaghetti sauce to meat mix not only adds flavor but also helps keep baked meatloaf moist.
