Spicy Louisiana Swamp Mama's Meat Loaf with Chili sauce
2 whole bay leaves
1 teaspoon of salt
1 teaspoon of cayenne pepper
1 teaspoon of black pepper
1/2 teaspoon of white pepper
1/2 teaspoon of ground cumin
1/2 teaspoon of ground nutmeg
4 tablespoons of butter
3/4 cup of minced onions
1/2 cup of minced celery
1/2 cup of minced green bell peppers
1/4 cup of minced green onions
2 teaspoons of minced garlic
1/4 teaspoon of Tabasco sauce
1 tablespoon of Worcestershire sauce
1/2 cup of cream
1/2 cup of ketchup
2 pounds of ground beef
2 eggs, lightly beaten
1 cup of bread crumbs
! jar of spicy Chili sauce
Recipe
Combine the first 7 ingredients in a bowl and set aside. Melt the butter in a skillet over medium heat. Add the onions, celery, bell peppers, green onions, garlic, Tabasco, Worcestershire, and seasoning in bowl. Sauté until mixture starts sticking to pan, stirring occasionally and scraping the pan bottom. Stir in the milk and ketchup. Remove from heat and allow mixture to cool. When mixture has cooled, add it to the ground beef in a large mixing bowl. Also add the eggs and bread crumbs. Mix by hand until thoroughly combined, being sure to remove the bay leaves. Mold into a oval shape in a 13 x 9 inch baking pan.
Bake, uncovered, at 350ºF for 55 minutes. Remove and let sit 5 minutes. Slice and serve immediately topped with Chili Sauce that has been heated to a boil.
