Sweet and Sour Meat Loaf
1 1/2 pounds ground beef
1 cup dry bread crumbs
1 teaspoon salt
1/4 teaspoon pepper
2 eggs
1 teaspoon instant minced onion
1 can (15 ounces) tomato sauce, divided
Topping:
Reserved tomato sauce
2 tablespoons brown sugar
2 tablespoons vinegar
1/2 cup sugar
2 teaspoons prepared mustard
Recipe
Mix together beef, bread crumbs, salt, pepper and eggs. Add onions and
one half of tomato sauce. Form into loaf in 9x5x3-inch pan. Bake at
350-degrees F for 50 minutes. In saucepan, combine topping ingredients;
bring to boil Pour over meat loaf; bake 10 minutes more. Yield: 6
servings
Laura's Note: We buy the bigger can of tomato sauce and use the
additional sauce in the Topping....adjusting the other Topping
ingredients slightly. We always have mashed potatoes with this meat
loaf and the Topping helps out there too!!
