Fruit N Cheese Desert Salad
1 pkg. (8 oz.) sugar-free Cook 'n Serve vanilla pudding
1 can (15 oz.) pineapple chunks, packed in juice, drained, reserve juice
6 cups assorted fresh fruit
3/4 cup light fancy cheddar cheese
1/4 cup orange juice
Recipe
In a saucepan, combine dry pudding, reserved pineapple juice and orange juice to make a fruit glaze. Heat over medium heat, stirring constantly until thickened, about 1 minute. Cool. Gently toss fruit glaze with pineapple chunks and fresh fruit chunks. Cover and chill until ready to serve. Top each 1 cup serving with 2 tbsp. cheese.
Makes 6 servings.
