    German Potato Salad with Bacon from David


    5 pounds red skin potatoes
    2 cups water
    2 beef bouillon cubes
    1/2 pound bacon, diced
    1 sweet onion, diced
    1/2 cup vegetable oil
    1/3 cup apple cider vinegar
    1 tbs sugar
    3/4 tsp salt
    1/4 tsp pepper

    Recipe





    Place potatoes (unpeeled) in a large pot and cover with cold water. Salt lightly. Bring to a boil and continue to boil 20 min. or until tender. Drain and cool slightly. Peel while still warm. Slice and place in a large bowl.

    Bring 2 cups water to a boil, reconstitute bouillon cubes. Set aside.

    In a skillet, cook bacon until crisp. Spoon bacon and 1 tbs of bacon grease over potatoes. Add bouillon, onion, oil, vinegar, sugar, salt and pepper. Mix gently. Serve warm.

    Makes 12 servings
