    Bibb Lettuce Salad


    4 ounces Bibb lettuce greens greenhouse)
    6 Pecorino olives
    6 Spanish olives
    2 oz. marinated hearts of palm (with 1/3 t choped thyme and pinch of pepper with 1Tbsp olive oil)
    2 turned artichokes
    1/8 cup diced carrots
    1/4 diced onion
    1/8 cup diced celery
    1/2 qt chicken stock
    salt to tste
    2 T olive oil

    Recipe




    Saute vegetables in olive oil until soft and add artichokes. Saute artichokes for 3-5 minutes, then add chicken stock, season with salt and braise until artichokes are tender (roughly 10 to 15 min). Mix with 2 tablespoons of good quality olive oil and add salt and pepper, to taste.

    Assembly

    Place the greens, olives, hearts of palm and artichoke-vegetable saute in a mixing bowl. Mix well so all of the salad is coated with the dressing of the vegetables. Place into serving dish or bowl and enjoy!

    Yields 2 servings
