    Duchess Potatoes from Tami


    4 large potatoes -- scrubbed, peeled,-- cubed
    4 tablespoons butter
    2 teaspoons milk
    2 egg yolks
    3/4 teaspoon salt
    1/8 teaspoon white pepper -- (optional)
    1 pinch cardamon -- (optional)
    mix together
    1 egg -- well beaten
    1/2 teaspoon water -- cold
    1/8 teaspoon paprika

    Recipe




    Steam potatoes until tender, about 20 minutes. Test with a fork. Mash adding butter, milk, seasoning to taste, then egg yolks. Try not to allow potatoes to cool very much. Spoon into heaping, rounded individual patties onto a buttered cookie sheet, or use a pastry bag to make spiraling puffs. Brush with egg and water mixture. Brown until light golden under a broiler for about 5 minutes. Sprinkle with paprika and serve.
