    Notes:

    This recipe is perfect for left-overs.. Here are some suggestions.... For flakier rolls use 3 sheets of pastry; Add 1 1/2 cups fresh or left-over broccoli (chopped) and use Swiss cheese Kids favorite....1/2 cup bite sized bacon pieces with Colby or Monterey jack cheese

    Mashed Potato Rolls

    Creamy mashed potatoes and cheese, rolled up in flaky phyllo dough--delicious


    1 box phyllo pastry sheets
    2-3 cups mashed potatoes
    1 1/2 cups grated cheese
    1/2 cup of butter, melted
    3 Tbsp mayonnaise
    2 tsp pepper
    1/4 cup parmesean/romano cheese

    Recipe



    Preheat oven to 325º. Prepare pastry according to box instructions. In a large mixing bowl mix all ingredients,(except melted butter), together and place near prepared pastry. Using 2 sheets of pastry, cut into 3 equal lengths (about 3" each), and baste the edges of each strip with the melted butter. Put 1 heaping spoonful of potato mixture at the end of each strip and begin to roll at the same time folding in the sides of the pastry until the end; baste the end to seal and place folded side down on a lightly greased baking sheet. Continue preparing rolls until mixture runs out. Keep rolls about 1" apart from each other and the sides of baking sheet.

    Drizzle the tops of rolls with remaining melted butter and sprinkle lightly with parmesan cheese. Bake according to box instructions (about 8-12 minutes); rolls are ready when tops of pastry appear brown and flaky.
