Roasted Potatoes with Peppers and Onions
1/4 cup olive oil
2 pounds potatoes, peeled and thinly sliced
2 medium onions, thinly sliced and separated into rings
2 green peppers, cored, seeded and cut into strips
2 red bell peppers, cored, seeded and cut into strips
1 can chicken broth (10.5 oz)
6 cloves garlic, minced
1 t. dried thyme
Salt land pepper to taste

In a 12 x 16" roasting pan, spread olive oil evenly. layer potatoes, onions and peppers evenly on top. Mix together the broth, garlic, thyme and seasonings and pour evenly over all. Tent loosely with foil and bake at 350 for about 1 hour or until potatoes and peppers are tender.
