    Raw Peppermint Chocolate Bark


    White Chocolate Layer

    ½ cup cacao butter
    ½ cup cashew powder (blend dry cashews into a powder)
    ¼ cup raw agave or 1/8 tsp. stevia powder
    2 tsp. vanilla
    dash of salt

    Dark Chocolate Layer

    1 cup cacao powder
    ½ cup melted cacao butter
    ¼ cup raw agave
    ½ tsp. salt
    2 tsp. vanilla
    peppermint oil to taste

    Recipe




    White Chocolate

    Grate cacao butter and melt cacao butter over hot water bath until liquid (do not heat above 115 degrees). Pour into a warm Vita Mix with other ingredients and blend on high speed until smooth and creamy. Warm vita mix by filling with hot water for 5 minutes. Dry very well before using. If any water gets in the chocolate it will not harden.


    Dark Chocolate

    Grate cacao butter and melt over warm water bath until liquid. Sift cacao powder to remove all clumps. Whisk all ingredients together until smooth. Mix over a hot water bath in order to keep mixture warm if it starts to clump together.


    Line a 9x9 baking dish with waxed paper and pour the dark chocolate to make a smooth thin layer. Place in refrigerator to harden. When the dark chocolate is firm, spread the white chocolate in an even layer on top of it. Put in refrigerator until firm. Cut or break into pieces. Store in refrigerator.
