    Smooth pea soup that is great for lunch on cool days.

    List of Ingredients




    Bacon & Green Pea Soup from Linda Geise


    2 cups split pea
    10 cups of water
    1 medium yellow onion
    4 beef bouillon cubes
    1 large smoked ham hock
    or 6 pieces of smoked bacon, crisp and crumbled into soup.

    Recipe




    Wash and sort 2 cups of dried split peas.

    Add 10 cups of water to pot, bring to boil, add peas bring to hard boil, 10 minutes, stir often, turn down to med-low.

    Add 4 beef bouillon cubes, and chopped yellow onion, and the smoked ham hock,(if using bacon hold back, until last 5 minutes of boil) boil for 20 minutes, or until peas are blended into soft soup.

    Add the bacon last 5 minutes of boil, crumble in and add cheese if you like for the added flavor.

    Makes 8 small soup dishes or five medium bowls.
