    Beef Barley Soup


    1 lb stew meat
    2 quarts water
    1 onion, peeled and quartered
    1 bay leaf
    1 tsp salt
    pepper to taste
    3 cups peeled and diced potatoes
    1 cup thickly sliced celery
    1 1/4 cups thickly sliced carrots
    3 Tbsp uncooked pearled barley
    2 tsp thyme
    1 tsp salt

    Recipe



    Brown beef. In pot, combine meat, water, onion, bay leaf, 1 tsp salt, and
    pepper. Bring to boil. Reduce heat to simmer and cook 3 hours until meat is
    tender. Add remaining ingredients to pot. Bring to boil. Reduce heat and
    simmer 20-25 minutes. Serve hot.

    Makes 12 servings.
