Kansas City Steak Soup
1 cup onions, chopped
1 cup carrots, chopped
1 cup celery, chopped
2 pounds ground beef or round steak, cut into cubes
1 stick margarine , melted
1 cup flour
2 quarts stock (may use water)
1 pkg. frozen mixed vegetables (16 oz)
1 can (16 oz ) tomatoes
2 T. beef stock base
1 t. pepper Recipe
Steam onions, carrots, and celery al dente. Brown meat and set aside. Combine flour and melted margarine to make a paste. Combine stock and boil until thickened slightly. In a separate pan, combine frozen mixed vegetables, tomatoes, beef base and pepper. Bring to a boil and simmer until vegetables are cooked. Now, combine all ingredients into the stock pot. This soup freezes well and is a meal in itself. Serve with crusty rolls and a salad
