Bread machines have become popular and almost a necessity in today's modern
home kitchen. However, they are made by a wide variety of manufacturers.
Be sure to read and understand the manual provided with your particular
bread machine. Thanks to today's bread machines, old-fashioned homemade
bread can be quick and easy, too.
Bread machines vary depending on the manufacturer. Before trying new
recipes, make a variety of those provided in your manual -- they were
developed specifically for your machine.
When trying any new recipe, be sure to stay within the limits of the
maximum flour amounts listed in the recipes in your machine's manual.
Add the ingredients ONLY in the order recommended by the manufacturer
(which isn't always how they may appear in published recipes).
Your bread machine does the mixing and kneading for you, so you must learn
to judge the bread with your eyes and ears to decide whether a recipe is
right for your machine or needs adjusting. If your bread machine sounds
labored as it kneads the dough, it might be too dry. If the dough looks
dry or cracked, add 1 to 2 tablespoons of water. If the dough is flat and
wet-looking, add 1 to 2 tablespoons of flour.
