    When making fried chicken, flavor it first with a salt and herb cure.
    Dust each chicken with a mixture of 1/2 cup kosher salt and 1/2 teaspoon
    each of chopped fresh thyme and sage. Let stand 45 minutes, then rinse.
    Soak in buttermilk for six to 24 hours before frying.
