Freezing VegetablesRecipe
Blanching vegetables stops the breakdown of the food and enables you to keep them in the freezer longer. Immerse washed and prepared vegetables in a pan of boiling water in quantities of about a pound at a time.
Start timing when the vegetables come back up to the boil. Most vegetables need blanching for 3-4 minutes. Remove from pan, rinse with cold water and dry with paper towel. Now the vegetables are ready for freezing.
