    10 Russet Potatoes
    ½ tsp. paprika (Spanish if possible)
    ½ tsp. roasted garlic powder
    ½ tsp. onion powder
    ½ tsp. dried thyme
    ½ tsp. dried basil
    Salt and pepper to taste
    ¼ cup dry white wine (Australian Chardonnay)
    ¼ cup diced onions
    ¼ cup olive oil
    ¼ cup grated Parmesan cheese (can be fresh if you wish)



    Recipe



    In a large casserole dish combine all of the above ingredients except the potatoes. It is best to start with the olive oil. Mix thoroughly so the herbs will all marry nicely together. Peel and slice your potatoes into ¼ inch thick pieces and layout in your casserole. Toss the potatoes so they become coated with the herbs and wine. Bake in a 350F oven for about 45 minutes or until fork tender.

    For a spicy twist you can add ½ tsp. hot sauce or chili flakes, and/or chopped and sautéed bacon. This is a perfect companion for a pork roast and fresh spring salad.
