(TWO) CUPS WHITE CORN MEAL
(TWO) Tbs. SALT
(ONE) Tbs. BLACK PEPPER
(3lbs.) SLICED GREEN TOMATOES
(ONE) QT. BUTTER MILK
(ONE) QT. VEGETABLE OIL
10” OR 12” CAST IRON SKILLET

METHOD
COMBINE: FLOUR, CORN MEAL, SALT, PEPPER,
WASH AND SLICE TOMATOES APPROXIMATELY ¼” THICK
HEAT VEGETABLE OIL IN SKILLET ABOUT A, ½” DEEP
DIP TOMATO SLICES INTO BUTTER MILK AND SHAKE OFF EXCESS
DREDGE SLICES IN MEAL MIXTURE, PRESS LIGHTLY
PLACE INTO PRE-HEATED 350 TO 375 DEGREE OIL, AND FRY BOTH SIDES TILL GOLDEN BROWN
PLACE AND LET DRAIN ONTO PAPPER TOWELS.
SERVE HOT WITH A RANCH DRESSING, DIPPING SAUCE
