    It's the vernal equinox - the time of year that symbolizes the change to spring. With the sun positioned right over the equator, the day and night are about equal in length around the world. (Equinox means "equal night".) From now until September, there will be longer and warmer days in the Northern Hemisphere, so.... Spring has sprung!

    Spring Vegetable Paella


    1 lb asparagus; cut into 2"-pieces
    3 c broccoli florets
    2 tb olive oil
    1 c red bell pepper; chopped
    1 1/4 c zucchini; chopped
    1/2 c onion; chopped
    4 c cooked brown or white-long-grain rice
    2 c tomatoes; chopped & seeded
    3/4 ts salt
    1/2 ts saffron threads or 1/4 tsp-ground t
    2 garbanzo beans; rinsed &-drained
    1 frozen peas; thawed


    Recipe

    Cook asparagus and broccoli florets in enough boiling water to cover in a 2-qt. saucepan, about 4 minutes or until crisp-tender; drain. Heat oil in a 10-inch skillet over medium-high heat. Cook
    asparagus, broccoli, bell pepper, zucchini, and onion in oil about 5 minutes, stirring occasionally, until onion is crisp-tender. Stir in remaining ingredients.

    Cook about 5 minutes, stirring frequently, until hot.
