Zucchini Cakes

2 Zucchini, grated
½ Yellow Onion, chopped
1 Feta- 1 cup (crumbled)
½ cup chopped parsley, basil, mint, chive
1 Tbsp. Garlic, chopped
5 Eggs
1 Tbsp. Harissa Spice
½ cup Lemon Juice
2 Tbsp. Kosher Salt
2 Tbsp. Black Pepper
2 Cups Flour
Procedure-
1. Combine all ingredients, in mixing bowl.
2. Whisk until fully incorporated.
3. Pan fry in blend oil.
4. Add additional oil if made the day before.
