    Note: This is a delicious way to use up leftover pasta. The variety of ingredients you may include in a pasta frittata are chopped fresh tomatoes, leftover vegetable or meat, a mix of herbs, or mozzarella cheese, to name a few.

    Pasta Frittata


    1/2 lb. thin spaghetti, cooked
    1/3 cup Parmesan cheese
    2 Tbsp. Italian parsley, chopped
    1 Tbsp. extra virgin olive oil
    1/3 cup chopped Fontina cheese
    1/2 lb. spinach, blancned
    3 eggs, slightly beaten
    salt/pepper


    Recipe



    Mix together all ingredients except olive oil. Heat a large, non-stick skillet (about 10"), add olive oil, when it is medium-hot, add the mixture, spreading it evenly in the skillet. Cook over medium heat for about 5 minutes, or until bottom of fittata has formed a golden crust. Invert frittata onto a plate, then slip it back into the skillet to brown the other side. Cook until a crust is formed. Cut into wedges and serve, with more cheese, if desired.
