    Spinach Linguini with Southwest Shrimp

    List of Ingredients




    8 ounces spinach linguini
    6 Tablsp butter
    1 Tablsp olive oil
    1/2 cup finely chopped shallots
    1-2 cloves garlic
    1 pound large shrimp, peeled
    1 red bell pepper,cut in matchstick size pieces
    1 jalapeno or to taste,seeded and chopped fine
    2 Tablsp lime juice
    1/4 cup dry white wine
    2 Tablsp parsley
    2 Tablsp cilantro
    dash tabasco
    S&P to taste
    1/4 cup grated parmesan

    Recipe



    Cook linguini, drain and set aside.
    Heat butter and olive oil in large skillet until butter melts
    Add shallots and garlic and saute 2 minutes.
    Add shrimp. Saute 2 minutes or til pink.
    Remove shrimp.
    Add red pepper and jalapeos to pan drippings and saute 3 minutes or til tender.
    Return shrimp to pan. Add lime juice, wine, parsley, cilantro, tabasco, S&P and mix well.
    Add linguini. Toss to mix and heat to serving temperature.
    Sprinkle with cheese.
    Serves 4.
