Crispy Potato Skins

2 lrg russet potatoes
butter flavored cooking spray
minced fresh rosemary - to taste*
black pepper - to taste
Recipe
Preheat oven to 375 degrees F. Wash the potatoes and pierce with
a fork. Bake until the skins are crisp - about 1 hour. Cut the
potatoes in half. Scoop out the pulp and save the pulp for
another use. Spray the inside of each potato with butter flavored
spray. Press in the minced herb. Return the skins to the oven
for about 5 minutes. Serve immediately. Makes 2 servings.
*Note you may also use other herbs or spices such as basil,
cayenne pepper, chives, dill, garlic, caraway seed, tarragon, or
thyme.
