Hollowed Bagels with Cottage Cheese

1 bagel per person
cottage cheese (amount depends upon how
much you want to use)

Slice bagel in half. With your index finger, start digging out the
dense, bulky, bready part of the bagel making sure not to tear any
holes in the bottom or sides. Once done, you should have two "bagel
shells." I prefer to toast mine after tearing out the bulk. Discard
the bulk (or maybe save to make bread crumbs or something). Fill with
cottage cheese (use low fat). After filling both shells with
cottage cheese, you have added approx. 14 grams of protein! Simple,
but delicious and healthier than the regular old bagel and cream
cheese!
