Strawberry Muffin Cones

List of Ingredients
2 cups all purpose flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
2 eggs
1 6oz carton strawberry yogurt
1/2 cup vegetable oil
1 cup fresh strawberries, cleaned and chopped
15 ice cream cones cups (about 3 inches tall)
1 cup (6oz) semisweet chocolate chips
1 Tblsp shortening
colored sprinkles
Recipe
In a large bowl, combine the first five ingredients. In another bowl, beat egg, yogurt oil and strawberries. Stir into dry ingredients just until moistened. Place the ice cream cones in muffin cups. Spoon about 3 Tblsp batter into each cone. Bake at 375ºF. for 19-21 minutes or until a toothpick inserted near the center comes out clean. Cool completely. In a saucepan, over low heat, melt chocolate and then decorate with sprinkles. Makes 15. **NOTE: These are best served the same day they are prepared. Muffins can be baked in paper liners instead of cones also.
