    Cheesy Spinach Dumplings

    2¼ cups flour
    ¼ teaspoon salt
    2/3 cup shortening
    6 oz. shredded cheddar cheese
    7 Tablespoons water¾ cup brown sugar
    1 teaspoon cinnamon
    6 medium apples, peeled and cored, left whole
    ¼ cup butter


    Recipe



    Combine the flour and salt, mixing well, then cut in the shortening until the mixture resembles coarse crumbs. Mix in the cheese and sprinkle with enough water while mixing lightly with a fork, until dough forms a ball. Divide the dough into three equal portions and roll each portion on a lightly floured surface, into a 14 X 7-inch rectangle. Cut each rectangle into two 7" squares. Combine the brown sugar and cinnamon, then fill the centers of the cored apples and top each apple with butter. Sprinkle remaining brown sugar mixture over the pastry. Place an apple in each square and fold the corners to the center, pinching the dough at the top of the apple to seal. Bake in the preheated oven at 450º for 30 to 35 minutes. Serve warm.
