    This fruity loaf showed up in Coke and Seven-Up cookbooks. Let cool and slice the day after baking. This recipe has been adapted from "Cooking WithCoke" - a publication of the Coca Cola Company.

    List of Ingredients





    Coca-Cola's Fruit and Date Loaf

    1 (8.00 ounces) package dates
    1 1/4 cups Coke or cola drink
    1 cup brown sugar, packed firmly
    2 tablespoons oil
    2 cups flour
    1 teaspoon baking soda
    1 teaspoon baking powder

    Recipe



    1 teaspoon cinnamon
    1 teaspoon lemon, rind of or lemon, zest of, finely minced
    1 egg
    1 teaspoon vanilla or coffee extract
    1/2 cup pecans, chopped

    1.Preheat oven to 350 F.
    2.Generously grease a 9 by 5 inch loaf pan.
    3.Chop dates.
    4.Heat cola to boiling.
    5.Remove from heat and stir in dates, mixing very well.
    6.Stir in sugar and oil.
    7.Cool while preparing other ingredients.
    8.Stir dry ingredients together and add to cola mixture. Stir in egg, extract and nuts.
    9.Spoon batter into pan.
    10.Bake about 1 hour until cake tests done. Cool on arack for 20 minutes then remove from pan and wrap.
    11.Store overnight before slicing.
