    Cuban Bread (makes 1 loaf, about 1 1/2 lbs)

    3 cups white flour
    2 teaspoons instant yeast
    1 1/2 teaspoon, more or less, salt
    1 cup tempid water

    For the mixer - put all ingredients in the bowl, engage the dough hook and kneed for 5 to 8 minutes. By hand the same, but kneed a bit longer. Let rise til double (about an hour), then form loaf (makes a nice baugette or batard). Let loaf rise about 45 minutes then pre-heat oven to 375 degrees F. I usually cook about 35 minutes, unless I'm using my cloche. With the cloche I put the loaf in the cloche and that in a cold oven set for 400 degrees for 35 minutes, then take the top off, turn the oven down to 350 and bake another 15 minutes.
