    Date Nut Bread

    1 lb. pitted dates

    2 heaping tsp. baking soda

    2 c. boiling water

    1 stick butter

    2 c. sugar

    2 eggs

    2 tsp. vanilla

    1/4 tsp. salt

    3 c. flour

    1 c. chopped nuts

    8 soup cans


    Recipe



    Cut dates into 1/2-inch pieces. Sprinkle baking soda

    over dates. Pour boiling water over dates; set aside. Cream

    butter with sugar; add eggs, vanilla and salt. Blend in flour.

    Drain water from dates and blend water alternately with flour

    mixture. Mix well. Add nuts and dates. Mix with a wooden

    spoon.

    Grease and well flour 8 soup cans. Fill cans 1/2 full

    and bake at 300 degrees for 1 hour and 10 minutes. Do not remove from

    tins for 15 minutes. After 15 minutes, tap the bottom of the

    can and contents should fall out. Cool on wire rack.
