    Maple Oatmeal Bread with Almonds

    Makes 1 loaf

    1 cup rolled oats
    1 cup boiling water
    1/2 cup maple syrup
    1/3 cup warm water
    1 envelope dry active yeast
    2 teaspoons canola oil
    1-1/2 teaspoons salt
    1-1/2 cups whole wheat flour
    1-1/2 cups bread flour
    egg wash to glaze the top.
    2/3 cup slivered almonds

    In a blender or food processor coarsely chop oats. Add the boiling water and let
    stand until water is luke-warm.

    In a bowl dissolve syrup, warm water and yeast. Add oil, salt, oats, and 1 cup
    of each flour, beat until smooth, add more flour to make a soft dough.

    Turn out onto a lightly floured surface and knead for 6-7 minutes until smooth
    and elastic.

    Place in a greased bowl, turning once so the top is greased too.

    Cover with a towel and let rise in a warm place until dough has doubled, about
    an hour. If you have a bread machine, you can set it for "dough" and let it do
    the recipe to this point.

    Punch down dough; turn out onto a floured surface. Shape into a flattened 9 inch round loaf.

    Place on a greased cookie sheet.

    Brush with egg wash and sprinkle almonds on top, pressing them in a little. Bake at 350 for 30 to 35 minutes.
