    SWEET POTATO BREAD

    3 c. sugar
    1 c. vegetable oil
    2/3 c. water
    4 eggs
    31/2 c. of plain flour
    2 tsp. baking soda
    1 tsp. baking powder
    1 1/2 tsp. salt
    1 tsp. cinnamon
    1 tsp. nutmeg
    2 c. fresh baked sweet potatoes
    1 c. pecans
    1 c. raisins
    3 or 5 T, flour

    Preheat oven to 350 degrees. Combine sugar, oil, water, eggs in a large bowl. Mix well. Add any ingredients. Beat well. Add sweet potatoes. Mix until smooth. Stir in pecans and raisins that have been crushed in 4 tablespoons of flour. Mix well. Pour into 8 mini-greased loaf pans or 2 regular-sized loaf pans. Bake about 30 to 35 minutes.
