    Apple Pecan Muffins with Sun-Dried Currants
    Makes 12 muffins

    2 cups whole wheat flour
    1/2 tsp salt
    2 tsp baking powder
    11/4 tsp ground cinnamon
    1/2 tsp ground ginger
    1/2 tsp ground allspice
    1/2 cup pecan pieces
    1/2 cup organic dried currants
    1 small granny smith apple, small dice (11/2 cup)
    1 cup nonfat milk
    1 large egg
    2 TB canola oil
    1/4 cup maple syrup
    1/4 cup granola
    12 cupcake papers

    Recipe



    Preheat oven to 375 degrees.
    Combine the first six ingredients in a mixing bowl; stir in pecans, currants, and apple.
    In a separate bowl, whisk together milk, egg, oil, and maple syrup.
    Add wet ingredients to dry; stir only until ingredients are combined.
    Spoon mixture into muffin tin lined with papers.
    Sprinkle granola on top of each muffin.
    Bake 20 minutes.
