    These muffins actually are great for breakfast or as a snack or a delicious bread to accompany the dinner entree!

    Banana Surprise Muffin Cakes

    1-1/2 teaspoons ground cinnamon, divided
    4 tablespoons granulated sugar, divided
    3 tablespoons butter-flavored shortening
    5 tablespoons fat-free cream cheese
    2-1/4 cups cake flour
    1 cup brown sugar, packed
    1/3 cup maple syrup
    1 egg
    1/4 cup fat-free egg substitute
    2-1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1-1/2 teaspoons vanilla extract
    5 or 6 bananas, divided

    Preheat oven to 375°F. Coat a muffin pan generously with nonstick cooking spray. In a small bowl, blend 1/2 teaspoon of the ground cinnamon with 2 tablespoons of the granulated sugar and set aside. In a mixing bowl, beat the shortening with the cream cheese until well blended, scraping bowl periodically. Add flour, brown sugar, the remaining granulated sugar, maple syrup, egg, egg substitute, baking powder, baking soda, salt, the remaining ground cinnamon, and vanilla extract to the mixing bowl (do not mix yet).

    CALL THE KIDS

    Have your child mash three of the bananas in a 4-cup measure using a potato masher or pastry blender. Add 1/4 or 1/2 of another banana if needed so the mashed bananas measure 1-1/2 cups altogether. Add to the ingredients in the mixing bowl and beat the mixture at low speed until well mixed, constantly scraping the bowl. Beat at high speed for four minutes, occasionally scraping the bowl. While you're doing this, have your child (four years and older) peel and cut two of the bananas, using a plastic knife, into about eight slices each banana; set aside.

    Pour the batter into the muffin cups using a 1/3-cup measure (do not scrape the inside of the measuring cup each time). Your child now can dip and roll one of the banana slices in the cinnamon-sugar mixture to coat completely and then press it into the center of one of the filled muffin cups. Repeat with the remaining banana slices. Have your child sprinkle the top of each muffin with the leftover cinnamon-sugar mixture using a 1/2 teaspoon. Bake for 22 to 24 minutes or until the top of the muffins spring back when pressed with a finger.


    Makes 14 muffins
