    Basic Muffin, to which you can add any number of crunchy or chewy bits such as chocolate chips, blueberries, pecans, raisins ... or whatever your imagination and tastes desire!
    Makes 10-11 standard-size muffins


    List of Ingredients




    9 oz plain flour*
    3 teaspoons baking powder
    ½ teaspoon salt
    3-4 oz fine white granulated sugar
    1 egg
    8 fl oz milk
    3 fl oz vegetable oil or 3 oz butter, melted

    Recipe



    1. Prepare muffin tins with liners or grease.

    2. Preheat oven to 375-400F

    3. In a large bowl, sift together: flour, baking powder, salt and sugar.

    4. In a separate bowl, beat egg with a fork. Stir in milk, followed by oil/melted butter. (Do not add hot butter directly to egg.)

    5. Pour all of liquid ingredients into dry mixture. Using a spoon, stir just until combined and no dry flour is visible. Scrape the bottom and sides of the bowl as you stir. This mixing should take about 30 seconds. The final batter will be lumpy. Do not over-stir.

    6. Fill muffin cups ¾ full. Bake for 20-25 minutes (15-20 minutes for mini-size). Muffins are done when tops are lightly browned and spring back when pressed gently. Allow muffins to cool for a few minutes to make removal easier. Best served warm.

    * With self-raising flour, decrease baking powder to 1 teaspoon
