    I'm a little reluctant to eat a toaster pastry every morning, but I'd eat these healthy muffins all day long. They're jam-filled and topped with a sweet glaze. The cereal makes a richer-tasting muffin; choose from: General Mills Wheaties Honey Gold or Healthy Choice from Kellogg's Multi-Grain Flakes.

    List of Ingredients




    Berry Toaster Pastry Muffins

    1 cup plain yogurt
    1/4 cup milk
    1/4 cup melted margarine
    1 large egg
    1 teaspoon vanilla extract
    1-1/2 cups cereal
    1-1/4 cups all-purpose flour
    1/3 cup sugar
    1 tablespoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/3 to 1/2 cup blueberry or strawberry preserves

    Sugar glaze
    1 cup powdered sugar
    2 tablespoons melted butter or margarine
    1 tablespoon milk
    Colored sugar sprinkles (optional)

    Recipe



    1. Preheat the oven to 425°F.

    2. Whisk the yogurt, milk, margarine, egg, and vanilla in a large bowl until blended; stir in the cereal. Let stand for 10 minutes.

    3. In a separate bowl, stir together the flour, sugar, baking powder, baking soda, and salt. Add to the cereal mixture, stirring until the dry ingredients are just moistened.

    4. Spoon half of the batter evenly into greased muffin tins. Place about 1 teaspoon of the preserves in the center of the batter in each muffin cup; spoon the remaining batter over the preserves. Bake for 15 to 20 minutes, or until done. Let stand for 5 minutes in the muffin tins and then transfer the muffins to wire racks.

    5. To make the sugar glaze, mix the powdered sugar, butter, and milk until smooth.

    6. Spoon the glaze evenly over the muffins; decorate with colored sprinkles, if desired. Serve warm or at room temperature. Refrigerate leftovers.
