    CARROT MUFFIN CAKES

    1/2 c. sugar

    2 c. flour

    1 1/2 tsp. baking powder

    1/2 tsp. baking soda

    1/2 tsp. salt

    1 tsp. cinnamon

    1/4 tsp. cloves

    2 eggs

    1 (7 1/2 oz.) jar junior carrots

    1/2 c. salad oil

    1/2 c. maple syrup

    Blend first 7 ingredients and set aside. Beat together the balance of the items listed, then add the dry mixture. Spoon the batter into 2 1/2-inch greased

    or papered muffin tins filling about 1/2 full. Bake at 350 degrees for about 20 minutes. (Test for doneness with toothpick). Makes about 18 muffins. Enjoy. Marilyn.
