    Carolyn's Sausage Cheese Muffins

    1/2 pound bulk pork sausage
    1/4 cup chopped green onions
    1/4 cup chopped green pepper
    3/4 cup all-purpose flour
    1/2 cup cornmeal
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/4 teaspoon red pepper, or to taste
    1 egg, beaten
    1 cup buttermilk
    1/2 cup (2 ounces) shredded Cheddar cheese

    Combine sausage, green onions and green pepper in a skillet; cook over medium heat until sausage is browned, stirring to crumble. Drain well. Combine flour, cornmeal, soda and salt in a medium bowl and stir well. Combine egg and buttermilk; blend well. Add buttermilk mixture, sausage mixture and cheese to flour mixture; stir just until combined. Spoon batter
    into greased muffin tins, filling two-thirds full; bake at 400 degrees F. for 28 to 30 minutes, until golden. Makes 1 dozen muffins.
