    Creole Corn Muffins


    1 & 1/2 cups sifted flour
    1 tablespoon baking powder
    1 teaspoon salt
    3 tablespoons sugar
    3/4 cup corn meal
    1 egg - well beaten
    1 cup milk
    1/4 cup lard - melted
    1 tablespoon chopped green pepper
    1 teaspoon finely chopped onion
    1/2 cup grated cheese

    Recipe



    Sift flour with baking powder, salt and sugar - add corn meal and mix. Combine beaten egg, milk and melted lard. Turn liquids into dry ingredients and stir vigorously until all flour is dampened. Add green pepper, onion and cheese. Pour batter into well greased muffin pans. Bake in hot 400 degree oven for 25 to 30 minutes.
    Makes 12 Corn Muffin's
