    Honey Cheesecake Muffins

    1/2 cup water
    3/4 cup honey
    2 cups cottage cheese
    1/2 teaspoon almond extract
    3 eggs
    1/2 cup all-purpose flour
    1/2 cup chopped almonds


    Recipe



    Prepare a syrup by bringing the water and 1/4 cup honey to a boil. Reduce heat and simmer for 5 minutes. Let the syrup cool. Preheat the oven to 350 degrees F. Place cupcake papers in a 12-muffin tin. With the back of a spoon, press the cottage cheese through a strainer into a large bowl. Add 1/2 cup honey and the almond extract; mix well. Beat in the eggs, one at a time. Stir in the flour. Mix the almonds into the batter and pour it into muffin tins, filling the papers to the top. Bake until the tops are puffed and golden and a wooden pick inserted into center comes out clean, about 45 minutes.

    Spoon honey syrup over the hot cakes. Cool in the tin. The cakes will shrink slightly. Put them on a platter and chill in the refrigerator for 2 to 3 hours before serving.

    Makes 12 cakes.
